RECIPES- PINE APPLE RASAM; BANANA WALNUT MUFFIN:
½ cup tour dal; 1/2 cup turmeric powder; 5 tomatoes blanched and skin removed; 1 cup pineapple chopped; 3 green chilies slit; ½ cup roasted cumin powder; ½ tsp roasted coriander powder; ½ tsp red chili powder; salt to taste; a few curry leaves; 2 tsp ghee; ¼ tsp mustard seeds; ¼ tsp cumin seeds; 2 garlic cloves; a handful of chopped coriander leaves.
Cook tur dal with 2 and a ½ cup of water in a pressure cooker until it becomes very soft. When done, pour dal in a vessel and whisk it until it becomes smooth. Keep aside. Make a puree of blanched tomatoes. Place pineapple pieces in a pressure cooker; add a little salt, green chilies and one fourth cup of water. Pressure cook until 5 whistles. Turn off heat, open the lid and mash the pineapple lightly. Heat ghee in a pan and add mustard seeds, cumin seeds, garlic and curry leaves. When mustard seeds begin to crackle, pour in tomatoes puree, cooked pineapple, coriander powder, turmeric powder, cumin powder, red chilli and salt. Stir all spices together and allow mixture to come to a boil. Now add whisked tur dal. Now add whisked tur dal and two cups of water in a pan and bring everything to a boil. Simmer for 12 minutes on low heat until you see the rasam frothing up. Once it does, turn off the heat. Garnish with chopped coriander leave. Serve hot with rice and a dash of ghee.
BANANA WALNUT MUFFIN:
3 long bananas ( mashed); 1/3 cup low fat butter (melted); ¾ cup sugar ( powdered); 1 egg beaten; 1 tsp baking powder; ½ tsp baking soda; 15 cup plain flour; 1 cup chopped walnut( roasted).
Preheat oven to 190 degree C. With a wooden spoon, mix butter into mashed banana in a large mixing bowl. Mix sugar, egg, and vanilla essence. Sprinkle baking powder and baking soda on the mixture and mix in. Add the flour, mix until it is just incorporated. Fold in the chopped walnut. Reserve some for sprinkling on the top. Line the muffin tray with paper liners and spoon the batter up to ¾ of it. It will rise, so make sure to leave room for it. Sprinkle some walnut on top. Bake for 30 minutes or until the toothpick inserted comes out clean.
